A small local bird, and a small local roaster.

The merill, the blue rock thrush, is Malta's national bird: quiet, native, and up before everyone else. We took the name because that's the sort of place we wanted to be. We buy green coffee by the season, roast in small batches at the back, and dial each one in until it's worth your morning.

No syrupy nonsense, no queues out the door for the sake of it. Just good coffee, made properly, on a street that's been baking bread for four hundred years.
